The next time you have the taste for mexican food, but don't want to dirty a million pans and chop veggies for hours, try this easy recipe for Mexican Casserole.

1 lb cooked, diced chicken. (Note: you can also use ground beef for this recipe, just substitute 1 lb. cooked and drained ground round).
6 flour tortillas
1 container sour cream
1 tomato, diced
1/2 onion diced
1 jar salsa
1 small container guacamole
2 cups shredded cheddar cheese (you can also substitute jack cheese if you prefer)

Lightly layer a casserole dish with 3 tortillas, chicken, tomato, onion, sour cream, guacamole and cheese. Repeat layers again, ending with the shredded cheese on top. Bake at 350 for 30 minutes or until cheese is bubbly. Serve with salsa.
