4 pieces of matzah, broken into pieces and soaked in water

2 cups cooked, chopped spinach
4 eggs, beaten
1 cup grated Swiss Cheese
Salt and pepper to taste
Vegetable oil

Drain matzah and squeeze out excess water.

Squeeze all liquid from spinach.

Combine all ingredients and mix well.

Drop by heaping tablespoons into hot oil and fry on both sides until light brown.

Serve with tomato wedges.

Makes 12 small fritatas.
