1/4 cup oil oil
6 medium onions, thickly sliced
1 tablespoon finely chopped garlic
1 chicken, cut in serving pieces
1 poung fava beans (pods) cut in thirds *
Juice of 2 lemons

Saute onions and garlic in olive oil until soft. Add chicken and saute until light brown. Add beans, lemon juice and water to barely cover chicken. Cover and cook on low heat until chicken is tender.

Serves 4-6 people.

* Be sure to select young fava beans that are soft and spongy with a thick velvety surface, and seedless.
