INGREDIENTS

2 c mashed cooked Louisiana yams
1 c firmly packed brown sugar
1 c light cream
1/2 c milk
3 eggs
1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp ginger
1 11-inch unbaked pastry shell
2 c sour cream
1/4 c sifted confectioners' sugar
1/2 tsp vanilla extract

DIRECTIONS

Combine yams, brown sugar, cream, milk, eggs, salt, cinnamon, nutmeg, and ginger in large mixing bowl; pour into pastry shell. Bake in preheated 350-degree oven for 1 hour or until knife inserted in center comes out clean; cool. Mix sour cream, confectioners' sugar, and vanilla; spoon around edge of pie and in center. Two 8-inch pastry shells may be used instead of 11-inch shell. Bake for about 50 minutes.
