Serves 8

INGREDIENTS:

3 oz. digestive cookies
1 oz. pecans
1 1/2 oz. unsalted butter
1 oz. white chocolate chips
9 oz. cottage cheese, drained
9 oz. cream cheese
grated rind of 1 orange
orange juice of 1/4 orange
2 eggs
4 oz. white sugar
1 tsp. vanilla extract
1 tsp. cinnamon
12 oz. applesauce
1 tbsp. all-purpose flour
1 red apple, cored and cut into thin wedges, to decorate

METHOD:

Preheat oven to 350 F (180 C). Using a food processor, add digestive cookies and pecans. Melt butter and white chocolate chips together. Add chocolate mixture to cookie mixture and blend until smooth. Spread base mixture across base of a deep, 9-inch round greased springform cake pan.

Using the food processor, add cottage cheese, cream cheese, orange rind, orange juice, eggs, white sugar, vanilla extract, cinnamon, applesauce, and flour. Mix until smooth. Pour apple mixture on top of cookie base. Bake for 35 minutes or until just set. Turn off heat. Open oven door and allow to cool. Chill overnight in the fridge and serve decorated with apple wedges.
