Serves 4

INGREDIENTS:

4 tbsp. sunflower oil
2 cups cooked turkey breast, cut into 1/2 inch cubes
1 cup cashews
2 oz. carrots, finely sliced
2 oz. broccoli, chopped
2 oz. corn niblets
4 cups precooked Basmati rice
1 tbsp. cilantro
1 tbsp. lemon juice
1 tbsp. chicken stock
2 tsp. steak seasoning
1 tsp. salt
2 tsp. black pepper

METHOD:

Heat oil in a frying pan. Add carrots, broccoli, corn, cilantro, steak seasoning, salt and black pepper. Stir fry for 5 minutes until softened. Add turkey pieces and cashews and heat through. Add rice, lemon juice and chicken stock. Bring to a boil and cook for 20 minutes, stirring constantly until liquid has evaporated. Serve hot with crusty bread.
