Apricot Turkey Bake Recipe
This turkey bake recipe hails from Elizabethan England (17th century), combining turkey and apricots smothered in a creamy sauce with Austrian smoked cheese, Cheddar cheese and herbs.
Serves 4
INGREDIENTS:
lb. turkey meat, cut into 1-inch strips
1 oz. all-purpose flour
1 tsp. salt
1 tsp. coarsely ground black pepper
3 tablespoons sunflower oil
1 clove garlic, sliced and diced
1 bunch green onions, finely chopped
5 oz. dried apricots, coarsely chopped
1 cup half and half cream
3 oz. Austrian smoked cheese, grated
1 1/2 oz. fresh white breadcrumbs
2 oz. cheddar cheese
1 1/2 tbsp. fresh parsley, finely chopped
1/2 tbsp. cilantro, finely chopped
METHOD:
Preheat oven to 375 F (190 C). Dip turkey strips in flour. Sprinkle a pinch of black pepper over turkey.
Put sunflower oil in a pan. Fry turkey strips for 3 minutes, stirring continuously until browned. Add garlic and salt. Add green onions and apricot pieces. Add cream. Cook for 3 minutes, stirring until thickened. Add Austrian smoked cheese. Mix well. Put in an ovenproof deep dish.
Combine white breadcrumbs, 3/4 parsley, 3/4 cilantro, and cheddar cheese. Sprinkle over turkey mixture. Bake in oven for 15 minutes until bubbling and golden. Grill for 2 minutes to harden top. Garnish with mixture of parsley and cilantro. Serve hot with a selection of baby vegetables according to seasonal availability.
