Ingredients:

1 prebaked pizza shell (15-inch)
1 1/2 cakes firm tofu
2 teaspoons ground fennel
2 tablespoons olive oil
2 minced garlic cloves
1/4 teaspoon cayenne pepper
1 tablespoon tomato paste
1 1/2 tablespoons soy sauce
1 teaspoon dried oregano
2 cups prepared tomato sauce
salt and pepper to taste


Preheat oven for pizza crust.

Chop tofu into smal pieces. Heat oil in large skillet and saute chopped tofu, garlic, fennel and cayenne for three minutes over medium heat. Stir in soy sauce, oregano and tomato paste, and continue to saute for another minute. Add tomato sauce, and remove from heat. Salt and pepper to taste.

Spread tofu topping on pizza. Bake following instructions for pizza crust.

If you like, top with grated cheese or soy cheese (if lactose intolerant).

Serves 2-3 as a main dish.
