Swedish Ginger Cookies
These holiday swedish ginger cookies are great to serve to your family or friends during celebrations. They can be baked ahead and served with coffee when unexpected company arrives too.
Instructions:
Preheat oven temperature to 350 F
In a medium to large mixing bowl beat until creamy the following ingredients:
3/4 cup Butter flavor Crisco (substitute Butter in European countries)
4 TBS molasses (teca for European countries)
1 cup granulated sugar or caster sugar
1 large egg
Mix together the following dry ingredients then stir into the creamed mixture:
2 cups of flour
1 heaping tsp of cinnamon
1 1/2 tsp ground ginger
2 tsp baking powder
pinch of salt
Roll dough out on lightly floured surface to desired thickness. For crisp, thin cookies roll very thin. For softer cookies, roll thicker. (for best results use a marble rolling pin)
Cut out desired shapes. Suggested shapes are hearts, circles or gingerbread men.
Using a spatula, place the cut out shapes onto an ungreased cookie sheet. (For best results use an air bake sheet)
Bake in preheated oven of 350F for 5-7 minutes depending on the desired crispness. After they are done baking, place them promptly onto a cooling rack until cool.
Variations:
* Sprinkle with powdered sugar
* Frost with buttercream icing
Store finished cookies in an airtight cookie tin or container until ready to serve.
