Sultana Spice Cake Recipe
This warming English spice cake recipe is full of golden raisins and spice, perfect for after school snacks, bagged lunches and coffee mornings.
6 oz. butter, softened
6 oz. soft brown sugar
6 oz. self-raising flour, sifted
1 tsp. baking powder
1 tsp. ground ginger
4 oz. golden raisins
Preheat oven to 350 F (180 C). Using a food processor, add butter, brown sugar, flour, baking powder, eggs, and ginger. Mix well. Fold in golden raisins.
Pour mixture into a deep, greased, 8-inch springform cake pan. Bake for 50 minutes. Cool in pan and turn out on a wire rack. Serve cold with coffee or tea, or as a snack for the kids.
