Try this temting spanakopita recipe. A Greek dish that gives spinach a different taste. This may be served as a main dish or a side dish.
2 pounds spinach, chopped
1 onion, chopped
4 tablespoons butter
1-1/2 cup feta cheese, crumbled
6 eggs, beaten
1/2 pound phyllo pastry sheets
Preheat oven to 350 degrees.
Saute onion in butter until soft. Add spinach and saute 3 minutes. Cool.
Mix in eggs and cheese. Put 7 layers of phyllo pastry sheets in 11x14 pan, brushing every sheet with melted butter. Add spinach mix and put 8 sheets of buttered phyllo sheets on top. Bake 25 - 30 minutes.
