1 2 1/2 pound broiling chicken
1/2 cup salad oil
3 TBS vinegar
1/2 TSP salt
1/2 TSP pepper
1/2 Cup minced parsley
1/2 Cup minced onion
Fresh parsley

Split chicken as for broiling. Mix the oil, vinegar,salt, pepper, parsley, and onion and put in a medium sized shallow dish. Lay chicken in this for at least an hour, turning it. Pour a little of the vinegar and oil mixture over the chicken. Then put in well greased baking pan, cover, baste from time to time, and bake in a hot oven, 375 degrees for 30 minutes. Uncover to finsh browning, allowing about 15 minutes longer. Garnish fresh parsley.
