1 3-4 lb pork butt
1 c shoyu or soy sauce
1 c packed borwn sugar
1 c water
4 1/2-in pieces ginger root

Cut pork into 3 inch cubes. Place shoyu sauce, brown sugar, water and ginger root in 5 quart saucepan; bring to a boil over high heat. Add pork; bring to a boil again. Reduce heat to low; simmer uncovered for 1 hour to 1 hour and 30 minutes or until pork is tender, turning pork occasionally. Serve with rice.
