Serves 4

INGREDIENTS:

1 large savoy cabbage steamed until tender, not soft
1 lb. cooked ground chicken
1 tsp. cinnamon
1 onion, finely chopped
1 stick celery, finely sliced
1/2 spinach, finely chopped
1 cup cooked green lentils and cooking liquid
1 tsp. turmeric
3 tbsp. golden raisins
4 cups cooked Basmati rice
baked potatoes to serve

METHOD:

Discard center leaves and part of hard center of savoy cabbage. In a bowl, combine cinnamon, onion, celery, spinach, lentils, lentil cooking liquid, turmeric, raisins, and rice. Mix well and spoon into cabbage. Fold inner leaves over mixture first and secure with cocktail sticks. Fold over outer leaves and secure the same way. Put in a steamer and cook for 35 minutes over vigorously boiling water until tender. Carefully remove and put in a deep serving dish to maintain the shape of the cabbage. Serve hot with baked potatoes.
