The secret to this dish lies in its simplicity and ease. All you need is the pre-cut chicken chunks or chicken strips, and the rice and tomato paste, and you're ready to cook. Of course, since I love spices, I have included my own, but there is no reason for you to stick to it, as I'm sure you will experiment and change the dish a little to fit your needs.

Ingredients

1 lb pre-cut chicken chunks or 1 tsp chopped onion or dried onion
strips 1tsp garlic powder
2c rice 2tbs olive oil
2c water
½ can green chile
2c tomato sauce Chopped Celery or Celery flakes
½ c stewed tomatoes drained
salt to taste
½ tsp pepper
2tbsp olive oil
season salt

In a 10" skillet, pour in oil, and heat on medium for 5 minutes. pour in rice, stirring quickly. Allow rice to brown and stir continuously for a few minutes, and then lower heat to medium low heat.

Pour in water and tomato sauce. stir. Sprinkle in peppr, onion, garlic powder, celery, and salt.

Allow rice to steam for 12 - 15 minutes. Stir occassionally.

Meanwhile, heat a 8" skillet with olive oil over a medium heat. When hot, add chicken chunks or strips, and stir until well browned and juices run clear when you poke the center of the chicken chunks or strips.

Add the stewed tomatoes and the green chile, stirring in thouroughly.

Allow to simmer for 5 minutes.

When rice is done, place on platter, or a bowl and pour on chicken mixture.

Enjoy.

You can also use beef for this dish, using stew meat or cut up round steak. If at all possible, try to use freash ingredients as they taste best, but don't be afraid to use dried spices or canned chiles or tomatoes.
