4 Tbsp. butter
1 large onion, chopped
2 lbs. pork shoulder, cut into large cubes
1 Tbsp paprika
2 cloves or garlic, crushed
1 1/2 Tbsp tomato paste
1 tsp. caraway seed
salt and pepper to taste
3/4 cup water
1 1/2 lbs sauerkraut, drained
1/2 cup sour cream

Heat butter in a large saucepan, add onion and saute until lightly brown. Add pork, stir and cover. Cook for about 5 minutes. Stir in paprika, garlic, caraway, tomato paste, salt, pepper, and water. Cover and cook gently for about an hour. Stir occasionally and add more water if needed. Squeeze sauerkraut as dry as possible, add to meat, mix well, cover. Cook for about 45 minutes until meat and sauerkraut are cooked. Just before serving, stir in sour cream.
Serves approximately 6 people

Serve as is or on noodles or rice.
