Serves 12 per variation of quiche

INGREDIENTS

For the flaky pastry:

6 oz. all-purpose flour
3 oz. salted butter, melted
3 tbsp. water

For the salmon and watercress quiche:

1 egg, beaten
1/2 cup half and half cream
1 tsp. salt
1 tsp. coarsely ground black pepper
4 oz. canned salmon, drained
2 tbsp. fresh watercress, chopped

For the salami and green pepper quiche:

1 egg, beaten
1/2 cup half and half cream
1 tsp. salt
1 tsp. coarsely ground black pepper
4 oz. salami, finely sliced
1 oz. mozzarella cheese, grated
2 oz. green pepper, deseeded and cut into thin rings
1 tsp. mixed dried Italian herbs

For the creamy mushroom quiche:

1 egg, beaten
1/2 cup half and half cream
1 tsp. salt
1 tsp. coarsely ground black pepper
1/4 tsp. ground nutmeg
4 oz. oyster mushrooms, thinly sliced
1 garlic clove, crushed

METHOD

For the salmon quiche:

Preheat oven to 400 F (200 C). Using a food processor, combine flour, butter, and water until a dough ball is formed. Press into a 9-inch greased quiche pan.

Using the food processor, combine egg, cream, salt, and black pepper. Add watercress and blend gently until just mixed. Fold in salmon. Pour salmon mixture into pastry case. Bake for 15 minutes or until golden. Serve warm or cold with a light salad and buttered potatoes.

For the salami quiche:

Preheat oven to 400 F (200 C). Using a food processor, combine flour, butter, and water until a dough ball is formed. Press into a 9-inch greased quiche pan.

Using the food processor, combine egg, cream, salt, black pepper, and Italian herbs. Layer half the salami in base of pastry case, followed by half the green pepper rings. Repeat and pour egg mixture on top. Bake for 15 minutes until golden. Serve warm or cold with a light salad and buttered potatoes.

For the mushroom quiche:

Preheat oven to 400 F (200 C). Using a food processor, combine flour, butter, and water until a dough ball is formed. Press into a 9-inch greased quiche pan.

Using the food processor, combine egg, cream, salt, black pepper, nutmeg, and garlic. Pour half egg mixture into pastry case. Add half the salami. Repeat. Bake for 15 minutes until golden. Serve warm or cold with a light salad and buttered potatoes.
