Fast And Tasty Potstickers Recipe

Forget your favorite Chinese restaurant. Now you can make fast and tasty potstickers in your own kitchen. Everyone loves them; they make great party appetizers. Why not make a batch?
Here's what you'll need to make about 10 large (or 20 small) potstickers:
1lb ground turkey, or beef
1/8-tsp. fresh shredded ginger
2 green onion stalks chopped fine
1/2 cup finely shredded cabbage
1 tsp. cornstarch
1 1/2 tsp. soy sauce
1 pkg. wrappers
1 can chicken broth
cooking oil
Note: The large wrappers are usually square so you'll need to cut them into circles for an authentic looking potsticker. To prevent drying out, only cut only a few wrappers at a time and keep the others well covered.
Mix the first 6 ingredients together in a large bowl. Place a large spoonful of the uncooked meat mix in a wrapper and fold up, carefully crimping the edges.
Hint: Moisten the edges if you have trouble keeping them sealed.
Pour about a tablespoon of the cooking oil in a large skillet and heat it on medium. Place about 5 potstickers seam side up in the pan and cook until lightly browned (about 5 minutes). Don't turn them. When the potstickers are sufficiently golden brown pour 1/3 cup chicken broth in the pan and cover with a lid. Lower the heat if necessary and cook for about 10 minutes (until the broth is absorbed). Remove the potstickers and place them in a shallow dish. Cover loosely with aluminum foil. This will keep warm while you cook the rest of the potstickers.
Dipping Sauce for Potstickers
1/4 cup rice vinegar
2 Tbs. soy sauce
1 Tbs. fresh shredded ginger root
1/2 tsp. hot pepper sauce
1/4 tsp. sugar
1/2 tsp. sesame oil
Mix all ingredients in a bowl. Serve with the potstickers.
