Turkey Potato Pancake Recipe
Wow, finally something different to do with that left over turkey from Thanksgiving dinner. Add some potatoes, a few other ingredients, and you have some wonderful pancakes to serve for lunch.
3 beaten eggs
3 cups shredded raw potatoes, drained (about 3 potatoes)
1 1/2 cups finely chopped, cooked or left over turkey
1 1/2 tsp. grated onion
dash pepper
1 Tbsp all purpose flour
1 1/2 tsp salt
canned cranberry sauce
In mixing bowl, combine eggs, potatoes, turkey, onion, and pepper. Add flour and salt. Mix well. Using about 1/4 cup batter for each pancake, drop batter onto hot greased grill, spreading to about 4 inches in diameter. Cook over medium low heat for 3 to 4 minutes on each side. Serve with cranberry sauce, and of course some gravy. Makes 15 pancakes.
