English Potato Salad Recipe
This easy to make English potato salad recipe combines new potatoes in a herby dressing in just 20 minutes for a great barbecue or picnic side dish.
2 lbs. cooked new potatoes with skins on
3 green onions, finely chopped
2 eggs, hard boiled and chopped
2 tbsp. mayonnaise
1 tbsp. fresh parsley and mint, coarsely chopped
carrot fans to decorate
Combine mayonnaise and herbs. Add potatoes and eggs. Mix well. Spoon into a serving dish and decorate with carrot fans. Serve chilled as a side dish to a barbecue or picnic meal. Kids love it!
