Recipe For Muffins
A great family recipe of Sour Cream Walnut Muffins with a hint of orange.
My family usually eats these muffins for breakfast, but you can serve them anytime.
3/4 cup sour cream
3/4 tsp baking soda
1/2 cup butter
3/4 cup sugar
1 tsp vanilla extract
grated rind of one orange
1 1/2 cup flour
1 tsp salt
3/4 cup chopped walnuts
Preheat oven to 350 F and grease a 12 cup muffin pan.
In a small bowl, mix together the sour cream and baking soda and set them aside. Cream together the butter and the sugar until the mixture is fluffy. Add the egg, vanilla, and orange rind and beat to combine them thoroughly.
Sift together the flour and salt. Beat dry ingredients into the batter alternately with the sour cream mixture until the batter is smooth. Stir in the walnuts.
Divide the batter evenly among the 12 muffin cups. Bake for 25 to 30 minutes or until they are firm and beginning to brown.
Remove the muffins from the oven and let cool for 5 minutes. Separate the muffins and remove them gently.
