Ingredients

Small pieces of carrot, 1/4 cup
Pieces of beans, 1/4 cup
Pieces of cauliflower, 1/4 cup
Pieces of green chillies, 1 tablespoon
Red chilli powder, 1 teaspoon
Seeds of mustard, 1/2 teaspoon
Tamarind water, 1/2 cup
Garlic, 6 nos
Oil, 1 tablespoon
Vinegar, 1/4 cup
Salt, to taste

Method

Blanch all the vegetables in boiled water for few minutes. Remove water and spread the vegetables on a muslin cloth for sometime. Keep a vessel on the stove with tamarind water and salt and allow boiling. Heat a little oil in a slow fire and add mustard seeds, red chilli powder, and pods of garlic. Stir well. When smell comes, add vegetables and mix well. Mix with tamarind water and vinegar. It is different from any other pickle. Most of the vegetables can be used for making this pickle.
