Mix these ingredients and then add 3\4 cup olive oil or vegetable oil. When you add the oil do it drop by drop being sure to whip the mixture thoroughly before adding another drop of oil. When all of the oil is added continue to whip the mixture until it is thick and then add 1 tablespoon of white vinegar or lemon juice. Whip this mixture until well blended and your mayonnaise is ready to serve.
When you are using a blender to make mayonnaise you will need to use different ingredients. Begin by blending 1 whole egg, 1 egg yolk, 1\2 teaspoon dry mustard, 2 tablespoons white vinegar or lemon juice and 3\4 teaspoon salt on low speed for 15 minutes. If you desire to spice up your mayonnaise recipe you can also add a dash of tabasco then switch your blender to high speed and add 1 1\2 cups olive oil or vegetable oil pouring it very slowly into the mixture. Continue to blend until the mixture has thickened. Unless you are using your mayonnaise in a recipe that requires it to be room temperature you should always refrigerate the product before serving. To make your mayonnaise in a food processor you will need to blend 1 whole egg, 2 tablespoons white vinegar or lemon juice, 1\2 teaspoon dry mustard, 1\8 teaspoon white pepper and 3\4 teaspoon of salt for 3 to 4 seconds. Without turning your food processor off, add 1 1\4 cups of olive oil or vegetable oil in a small slow stream to the mixture. Allow to blend until the mixture has thickened and serve. In most cases homemade mayonnaise keeps for a week in a tightly sealed container in the refrigerator. If you mayonnaise curdles you should whisk 1 egg yolk until it is thick then add a few drops of oil as you continue blending. Gradually mix this in with your mayonnaise and continue beating until the mixture is thoroughly blended.
