Serves 6

INGREDIENTS:

10 oz. Madeira cake, broken into pieces
grated rind and juice of 1 lemon
2 oz. saltless butter, melted
2 lb. tart green apples, peeled, cored, and diced
2 tbsp. water
2 oz. soft brown sugar
1/2 tsp. ground cinnamon
2 oz. golden raisins
icing sugar to dust

METHOD:

Preheat oven to 350 F (180 C). Using a food processor, combine Madeira cake pieces, lemon rind, and melted butter. Mix until smooth. Set aside.

Put apples, lemon juice, and water in a pan. Cook until apples are almost disintegrating. Add brown sugar, cinnamon, and golden raisins. Simmer gently for 3 minutes until sugar has dissolved and apples are pureed.

Put a third of the cake mix over the base of an 8-inch greased springform deep cake pan. Add half of the apple mixture. Repeat; make cake layer as the final layer. Bake for 20 minutes until golden. Cool in pan. Remove cake from pan. Dust with icing sugar and serve warm with hot tea or coffee.
