Vegetarian Lasagna Recipe
Great vegetarian lasagna recipe! Think lasagna needs to take a long time to prepare? Think again! It has less ingredients and is less confusing. But the taste is just wonderful!
8 oz Lasagna noodles (about 9)
1 carton cottage cheese
12 oz low fat shredded cheese
1 jar spaghetti sauce
1/2 package Morning Star Farms
various Italian seasonings
Place noodles separately in a large pot of boiling water, gently. Cook for approximately 7-9 minutes, or until just barely soft. Take off heat; drain.
Spray a 9x13 inch rectangular pan with Pam (or equally good pan spray). Lay the first layer of noodles on the bottom of the pan. Next, spread a generous layer of sauce on top of the noodles. Sprinkle various seasonings on the sauce, if desired.
Layer the recipe crumbles on the sauce, then the cottage cheese. Sprinkle cheese on top of the cottage cheese. Begin layering in this fashion until the noodles are used. Sprinkle what is left of the cheese on top of the noodles.
Bake at 400 degrees for 35 to 40 minutes, or until cheese is a light golden and sauce is bubbling.
Yields 12 servings; serve with salad and bread sticks for the ultimate Italian meal!
