This is a great recipe that I got from an Indian friend of mine that used to own a restaurant. I'm sure you will enjoy it.

3 large eggplants
6 medium tomatoes
2 green peppers
2 medium onions
2 cloves garlic
1 Tbsp fresh grated ginger
2 Tbsp oil
3/4 tsp cumin
3/4 tsp black mustard seeds
1/2 tsp turmeric
1/2 teaspoon coriander powder
1/4 teaspoon red pepper
1/8 tsp cloves powder
black pepper
juice of 1 lemon

Prick eggplants whole and roast on barbeque or oven until charred on the outside. Cut tomatoes, onions, slice peppers, chop garlic and grate the ginger.

Heat skillet with the oil. Add the cumin, mustard seeds, coriander powder, red pepper, cloves, turmeric, and black pepper, and stir quickly. Add ginger, garlic, and onions and saute quickly.

Remove the skins from the charred eggplant and add the eggplant, tomatoes peppers and the juice of the lemon to the spices. Simmer 10 to 15 minutes. Serves 6 lucky people!
