Talk to anyone from the south and they will tell you that fried fish is just not fish without the hush puppies. This small, deep fried ball of cornmeal dough has become a popular compliment to many dishes including beans, peas, soups, salads and even chili. This simple recipe will have everyone enjoying hush puppies.

What you will need:
1 1\2 cups corn meal
1 1\2 cups water
2\3 cup milk
1 tablespoon vegetable oil
2 tablespoon grated onion
2 eggs, beaten
1 cup flour
3 teaspoons baking powder
2 teaspoons salt
1 teaspoon sugar (optional)
1 deep pan
3 cups vegetable oil for cooking

Cook corn meal and water, stirring until stiff and rolling into a ball. This should take about 6 minutes. Remove from heat and add oil, salt and grated onion. Stir until smooth. Gradually stir into beaten eggs in a 2 quart bowl. Measure flour by deep level pour or sifting. Blend dry ingredients. Add to corn meal batter and stir until thoroughly mixed. Heat oil to 375 degrees. Oil must be at least 2 inches deep. Drop batter by teaspoons into hot oil. Fry 6 to 7 minutes and drain. Serve while hot. This recipe makes 24 to 30 hush puppies. Left overs can be reheated by wrapping in foil and placing in a warm oven for 5 minutes or in the microwave.
