2 tsp salt
1 tsp pepper
1 tsp paprika
1/4 tsp garlic salt
1 tsp rosemary leaves
1 tbsp steak sauce
1 12 lb fresh leg of pork, boned
1/3 c chopped parsley
1/3 c chopped black olives
1/3 c chopped green onions
3 canned pimentos, chopped

Combine salt, pepper, paprika, garlic salt, rosemary leaves and steak sauce; rub half the mixture on inside of pork. Combine remaing ingredients; stuff inside of pork with pimento mixture. Tie securely. Score fat and skin; rub remaining salt mixture on outside of pork. Place roast, fat side up, on rack in shallow baking pan. Roast in preheated 325 degree oven for 4 hrs 30 minutes. Yield: 16 servings.
