English Ginger Cake Recipe
This old family cake recipe combines zippy ginger with the creaminess of English golden syrup - great anytime of year for bagged lunches, kids' snacks or birthdays.
Serves 8
INGREDIENTS:
8 oz. self-raising flour, sifted
2 tsp. ground ginger
1 tsp. Jamaican allspice
2 cups milk
4 oz. hard margarine
1/2 c golden syrup
2 oz. white sugar
1 egg
METHOD:
Preheat oven to 325 F (160 C). Put sugar, golden syrup, and hard margarine in a pan. Melt slowly over a low heat. Cool till lukewarm.
Using a food processor, add flour, ginger, allspice, milk, golden syrup mixture, and egg. Beat well.
Pour into a greased lb. loaf pan. Bake for 3/4 hour in center of oven. Allow to slightly cool in pan. Turn out onto wire rack. Serve warm or cold with coffee or tea, or as a kids' snack.
