Fruit Bar Recipe
This old family fruit bar recipe combines fruits and nuts on soft pastry. These bars are a great alternative to store bought, after school snacks for kids.
Makes 16 bars
4 oz. butter
3 oz. white sugar
3 oz. milk chocolate, broken into pieces
1 egg, beaten
1 cup mixed dried fruit
1 tbsp. walnuts, finely chopped
1/2 lb. digestive cookies, finely crushed
2 oz. icing sugar
1 tbsp. cold water
2 drops red food coloring
1 tsp. cinnamon
Preheat oven to 325 F (160 C). Melt chocolate and butter together. Combine mixed dried fruit and walnuts. Add mixture, sugar and cookies to chocolate. Mix well.
Press into silicon paper lined Swiss roll pan. Bake for 5 minutes until golden. Cool in pan.
Using a food processor, combine icing sugar, water, food coloring and cinnamon. Mix well.
Spread on cooled cookie mixture. Allow to set. Cut into 16 bars and use a metal spatula to move bars to a wire rack. Serve cold with coffee or tea, or as a kids' snack.
