Frozen Lemon Pie Recipe
A delicious frozen lemon pie made with an oreo cookie crust.
Oreo Crumb Crust Ingredients & Cooking Directions
1 1/4 cup finely crushed Oreo cookies
1/4 cup melted butter
1 tablespoon sugar
Combine cookie crumbs, melted butter, and sugar. (Reserve 1/4 cup for garnish.) Press remaining mixture against bottom and sides of 9-inch pie plate. Chill until filling is ready.
Lemon Filling Ingredients & Cooking Directions
3 eggs, separated
1/2 cup sugar
1/3 cup lemon juice
2 tablespoons sugar
1 cup whipped cream
1 teaspoon grated lemon rind
Beat egg yolks until very thick; gradually beat in 1/2 cup sugar and lemon juice. Beat egg whites to soft peak stage, adding 2 tablespoons sugar gradually, continuing to beat until whites are stiff. Fold egg whites and whipped cream into lemon mixture; stir in lemon rind. Pour into chocolate crumb crust, sprinkle with reserved crumbs. Freeze until firm.
