Modern times mean mothers and fathers must work longer hours. Family time is getting harder to find and preparing a decent meal everyone can enjoy is tiring and time consuming. This three-course family feast is designed to put the pleasure back into cooking. It's fast. It's easy and best of all the kids can have fun helping too! Take time to relax with Red and Green Prawn Cocktail Crunch, Broccoli Chicken in Satay Sauce, Coconut Cilantro Rice and Blueberry Peach Badger.

Serves 4

INGREDIENTS

For the crunch:

1/2 lb. cooked prawns, shelled and veins removed
2 tbsp. mayonnaise
1 tbsp. tomato ketchup
1 red pepper, deseeded and coarsely chopped
1 green pepper, deseeded and coarsely chopped
4 inner lettuce leaves, washed and shredded

For the chicken:

4 skinless and boneless chicken breasts, cubed
1/2 lb. broccoli, washed and roughly chopped
4 tbsp. hot chili sauce
1 tbsp. smooth peanut butter
1 tbsp. sunflower oil

For the rice:

2 tbsp. sunflower oil
2 1/2 cups Basmati rice
3/4 cup fresh cilantro, washed and coarsely chopped
1 tsp. Salt
1 cup thick coconut milk
3 cups water

For the badger:

1 cup fresh blueberries, washed
1 peach, destoned and sliced into 8 pieces
4 scoops vanilla ice cream
4 ginger cookies

METHOD

For the crunch:

Combine prawns, mayonnaise, ketchup, green pepper and red pepper. Mix well. Place lettuce pieces on six side plates. Spoon prawn mixture on each leaf. Serve chilled as a starter with toast.

For the chicken:

Put sunflower oil in non-stick frying pan. Fry chicken pieces for 5 minutes, turning twice. Add chili sauce and peanut butter. Simmer gently for 15 minutes. Serve hot on the rice.

For the rice:

Wash rice to remove starch. Put 1/2 sunflower oil in pot. Add rice and water. Boil vigorously for 10 minutes or until rice is bubbling. Drain and put remaining oil back in pot. Add rice and coconut milk. Bring to a boil. Reduce heat to minimum and cook for 15 minutes. Add cilantro and mix well. Serve hot with chicken.

For the badger:

Put a ginger cookie in four separate bowls. Put a scoop of ice cream on top of each cookie. Put two slices of peach on either side of the ice cream. From the top of the slices put lines of blueberries going down the back. On the front of the ice cream put 2 blueberries each for eyes and one each for a nose. Put in freezer for 5 minutes to chill. This cannot be made until after the meal!
