Energy Bar Recipe
Energy Bars are a healthy alternative to fattening chocolate bars.
1 cup sesame seeds
1/2 cup chopped peanuts (or nuts)
1 cup coconut
1/2 cup brown sugar
1/2 cup peanut butter
1/2 cup honey
1 teaspoon vanilla essence
Preheat oven to 160 degrees Celcius (325 degrees F).
Combine the sesame seeds, peanuts, coconut and sugar.
Blend the peanut butter and honey and heat in a small saucepan over a low heat till the honey has softened. Stir well and pour over the dry ingredients and mix.
Pour into a greased baking tray and press down firmly. Using a rolling pin or a large mug, spread the mixture evenly, by rolling lightly over the mixture.
Bake for about 15 minutes or till brown on top.
Remove and cool. Cut into squares before it has cooled down completely.
Leave to cool.
These energy squares make an ideal gift - wrap in brightly coloured cellophane paper and tie with a paper ribbon. Type out the recipe on a card and add it to the gift.
