INGREDIENTS

1 cup rice
2 cups water
4 cups milk
1 1/2 cup sugar
2 egg yolks (beaten)
2 teaspoons vanilla
2 teaspoons cornstarch (optional)

DIRECTIONS

Place the rice and water in a medium saucepan. Cook the rice until all of the water evaporates. This should take about 20 minutes. Stir regularly to prevent sticking. Add the milk, sugar, egg yolks, vanilla, and cornstarch. Mix the combination well. Cover and cook on low heat until mixture becomes thick. Stir occasionally to prevent sticking. Pour into casserole dish and garnish with cinnamon, nutmeg, or both. Refrigerate. (Note: this can be eaten warm as well.)
