Chocolate Chip Cheesecake Recipe
Chocolate chip cheesecake squares are easy to bake and fun to eat.
They look like little cheesecake sandwiches, and boy do they taste great! Here's a simple recipe that uses only a few easily accessible ingredients. Put them together and your friends will think you baked from scratch. You’ll need:
2 Loaves of prepared chocolate-chip cookie dough
2 Eight-ounce bars of cream cheese, softened
¾ Cup sugar
½ Teaspoon vanilla
Preheat oven to 350 degrees. Slice one of the prepared chocolate-chip cookie dough loaves, as you would to make cookies. Slices should be about ¼-inch thick. Arrange slices to create a layer on the bottom of a greased, 9 x 13-inch pan. Slices should touch each other, but do not worry if there are open gaps. Once the cookie dough bakes it will rise and spread to fill in the gaps.
Mix cream cheese, sugar, vanilla and egg with electric mixer until creamy. Using a spatula, spread the cream cheese mixture evenly across the layer of cookie dough slices.
Slice the second cookie dough loaf in the same fashion as the first. Cover the cream cheese mixture with these slices. Again, be sure that slices touch each other and cover entire the area of the pan.
Bake at 350 degrees for 30 minutes, until cookie dough is browned. Cool in the refrigerator for at least one hour before cutting into squares. Keep refrigerated until serving.
