English Chocolate Bars Recipe
These buttery English bars combine chocolate, dried fruit and nuts - great chilled for a naughty treat, coffee mornings or kids' snacks.
Makes 16 bars
1 oz. butter, melted
3 oz. milk chocolate chips
2 oz. glace cherries, coarsely chopped
2 oz. walnuts, coarsely chopped
4 oz. white sugar
2 oz. desiccated coconut
1 egg, beaten
1 tsp. cinnamon
Preheat oven to 325 F (160 C). Melt chocolate chips. Spread chocolate over a greased Swiss roll pan. Allow to set.
Combine cherries, walnuts, sugar, and coconut. Mix well. Add cinnamon, butter, and eggs. Mix thoroughly. Spread mixture over cold chocolate. Bake for 5 minutes until golden brown. Allow to cool in pan.
Cut into 16 bars. Use a metal spatula to move bars onto a wire rack to cool completely. Serve cold with coffee or tea, or as a kids' snack.
