Ingredients:

1 pkg coconut macaroon mix
4 eggs
2 c sugar
1 1/2 c vegetable oil
3 jars carrot baby food
2 c flour
1 tsp vanilla
Frosting
Chopped Nuts

Mix macaroon mix with 3/4 cup water; set aside. Beat eggs slightly. Add remaining ingredients; mix well. Spread 1/2 of the carrot mixture into 15 1/2 x 10 1/2 inch jelly roll pan' spoon macaroon mixture over mixture in pan. Spread remaining carrot mixture over top. Bake in preheated 350 degree over for 45 minutes. Spread with Frosting. Sprinkle with nuts.

FROSTING:

1-3 oz pkg cream cheese
1/4 c butter
1 3/4 c confectioners sugar
1 tsp vanilla

Mix all ingredients well.
