French Toast Strata
(assemble this the night before and refrigerate)
Ingredients:
1 pound loaf of french bread, cubed . (About 11-13 cups of cubed bread)
1 brick of cream cheese, cut into cubes
8 eggs
2 1/2 cups skim milk
6 tablespoons butter, melted
1/4 cup of maple syrup

Grease a rectangular baking dish and place half of the bread cubes into the dish. Top with cream cheese cubes and then the remaining bread cubes. Combine eggs, milk, butter and syrup and mix well. Pour over bread cubes. Bake, uncovered for 40 minutes at 325 degrees. Makes 8 servings.


Baked Potato Scrambled Eggs

Ingredients:

3 large baking potatoes
6 eggs
fresh chives

Microwave the potatoes until tender. Cut them in half and scoop out about half of the potato, reserving it to use later. Scramble eggs and put into potato shells. Sprinkle fresh chives on top.

Whitefish Spread

This tastes great on a bagel or toast

Ingredients:

Smoked Whitefish (about 1 lb.)
Brick of cream cheese

Combine the above 2 ingredients and spread on a bagel or toast.

Chunky Strawberry Spread

This is great on toast as an alternative to store bought jelly

Ingredients:

4 cups ripe strawberries cut into thick slices
1/2 cup sugar
1 1/2 tablespoons orange juice
1 teaspoon lemon juice
1/2 tablespoon unflavored gelatin
1/3 cup boiling water

In a saucepan, boil strawberries, sugar, orange and lemon juice as you crush the berries. Remove from heat. Dissolve the gelatin in boiling water and stir into strawberry mixture. Let cool to room temperature, transfer to a glass bowl and refrigerate.
