Blackened Catfish Recipe With Tartar Sauce And Rice
Try this blackened catfish recipe with tartar sauce and rice. A combination of hot skillet and a seasoning rub gives the fish a dark crispy crust.
1/4 cup uncooked rice
4 catfish fillets
2 tsp lemon juice
nonstick garlic-flavored cooking spray
2 tsp blackened or Cajun seasoning blend
Preheat Easy Tartar Sauce.
Cook rice according to package directions, set aside.
Rinse catfish under cold running water, pat dry with paper towels. Sprinkle filets with lemon juice, coat with cooking spray. Sprinkle with seasoning blend coat again with cooking spray.
Heat large nonstick skillet over medium-high heat until hot. Add 2 filets to skillet, seasoned side down. Cook 3 minutes. Reduce heat to medium and cook 3 minutes more or until fish begins to flake when tested with a fork.
Remove filets from skillet, keep warm. Repeat with remaining filets. Serve with Your Favorite Easy Tartar Sauce and rice.
Please use your favorite tarter sauce. I prefer to make mine, here is the recipe:
1 cup mayonnaise
1 tablespoon chopped sweet pickles
1 hard boiled egg, finely chopped
1 tablespoon minced onion, or shallots
1 teaspoon vinegar
1/2 teaspoon mustard
Combine all ingredients and mix well. Chill in covered dish until ready to use. Serve with almost any fried fish.
COOKING TIP: If there is any left over tartar sauce, it can be used on a salad.
