Classic Banoffi Pie Recipe
This recipe for banoffi pie combines spiced bananas, luscious cream and toffee filling in a light pastry for a great dessert for barbecues or parties.
1 lb. ready made flaky pastry case
3 oz. butter
9 oz. soft brown sugar
14 oz. sweetened condensed milk, heated for 10 minutes in its unopened can
4 medium bananas, thinly sliced
1/2 cup whipped cream
Melt butter, soft brown sugar, and condensed milk in a pan. Simmer gently for 10 minutes until thickened and golden. Stir continuously. Remove and allow to cool for 10 minutes.
Put half of the banana slices in the base of the pastry case. Pour over the toffee filling. Allow to cool. Pipe whipped cream around edges of pie. Decorate top of pie with remaining banana slices. Serve cold.
