Banana Cream Bread Pudding Recipe
This traditional English bread pudding is filled with bananas, bread, spice and golden raisins for a warming Winter dessert for a family.
7 inches brown bread, sliced and cut into triangles
3 oz. saltless butter
6 ripe bananas, thickly sliced
2 tbsp. soft brown sugar
1 tsp. ground cinnamon
1 cup condensed milk
2 oz. soft brown
Preheat oven to 350 F (180 C). Using a food processor, combine half the bananas, larger amount of sugar, cinnamon, eggs, and condensed milk. Blend until smooth.
Butter both sides of bread triangles. Use remaining butter to grease a 3-cup ovenproof dish. Cover base of dish with one layer of bread triangles, not overlapping. Add a layer of the banana slices. Repeat, ending with a final layer of bread triangles.
Pour over cream mixture. Allow to sink in. Sprinkle with remaining sugar. Bake for 45 minutes or until set. Serve hot.
