INGREDIENTS:

6 oz. butter, softened
6 oz. soft brown sugar
6 oz. self-raising flour, sifted
1 tsp. baking powder
3 eggs
2 oz. ground almonds
grated rind and juice of 3 lemons

METHOD:

Preheat oven to 350 F (180 C). Using a food processor, add butter, brown sugar, flour, baking powder, eggs, ground almonds, lemon rind and lemon juice. Mix well.

Pour mixture into a deep greased 8 inch springform cake pan. Bake for 50 minutes. Cool in pan and turn out onto a wire rack. Serve cold with coffee or tea, or as snack for the kids.
