Rolled Almond Wafers (makes 5-6 dozen)

1 1/2 cup finely ground unblanched almonds
1 cup soft butter
1 cup sugar
2 Tbl. flour
4 Tbl. heavy cream
dash salt

Mix ingredients in small heavy saucepan and heat until butter melts. Drop by tsp. about 3 inches apart on BUTTERED and FLOURED cookied sheets.

Bake 6 cooies at a time in 350 degree oven about 5-7 minutes until edges brown but centers are still bubbly.

Cool 1-2 minutes, then quickly loosen with thin knife or spatula and wrap around wooden spoon handle. Lay joined side down on rack to cool.
